Looking for some quick and easy vegan recipes for the kids to make? Here is a neat way to make cashew butter at home. Cashew butter has a mild, neutral taste, making it versatile for both sweet and savory dishes. First, lightly toast around 400-500 grams of raw cashews at 180 degrees Celsius for about 10 minutes, stirring halfway through. Alternatively, you can use already roasted cashews. Once cool, place them into an S-blade food processor and blend. The mixture will first become crumbly and then clump and stick to the sides, so stop to scrape down and continue processing. While the machine is running, add 1 to 2 tablespoons of melted coconut oil and keep blending until smooth and creamy. If using unsalted cashews, you can add a ½ to ¾ teaspoon of salt and mix in during the process. Let it cool to room temperature, and transfer to a clean jar, seal, and store in the refrigerator for up to one month.
