I have a vegan cooking tip on how to prepare potatoes to preserve their essential nutrients. First, if you wish to remove the peel, you can do so after boiling or steaming, since many of the valuable nutrients are found near the skin. Peeling them before cooking may result in the loss of these vital nutrients. It will also be easier to remove the skin after it is cooked and becomes soft. Secondly, it is better not to immerse potatoes in cold water before cooking, as the Vitamin C in them can be lost in this way. Lastly, if you want to add salt to your potatoes, it is better to do so right before serving them instead of at the start of cooking. Potatoes are high in potassium, and cooking with salt can leech this important mineral from them during the cooking process. Adding salt after the potatoes are cooked not only helps preserve their nutritional value, but also their taste.
