Keeping strong on a vegan diet is all about smart food preparation. Here’s a recipe on how you can make healthy vegan flapjacks, also known as chewy bars. Start by preheating the oven to 180 degrees Celsius and lining a 20x20cm square tin with parchment paper. In a big mixing bowl, use a fork to mash three ripe bananas until they are smooth. Stir in 28 grams (2 tablespoons) of coconut oil (after melting it on low if it’s a solid at room temperature) and 40 grams (2 tablespoons) of maple syrup until everything is combined. Next, add in 100 grams of roughly chopped dried apricots, 50 grams of unsweetened desiccated coconut, 50 grams of pumpkin seeds, 200 grams of oats, and a pinch of salt. Mix well until all the oats are completely coated in the banana mixture. Pour the mixture into the tin and use the back of a mixing spoon to press it into its corners and level it to make a smooth surface. Bake it in the oven for 30 minutes, or until you see the top and edges turn golden-brown. Once it’s done baking, allow it to cool completely on a cooling rack prior to slicing it into nine squares. These can be stored in an airtight container for a maximum of 3–4 days. Enjoy!
